Chicken fried rice Recipe

INGREDIENTS :

  • 1 whole chicken [2½-3 lbs]
  • 5-6 stalks fresh scallions
  • 6 inch fresh ginger, peeled, cut into thick slices
  • 2 tsp soy sauce
  • 1 tsp sesame oil
  • 2 additional stalks fresh scallions, chopped, for garnish [optional]
  • 1 seedless cucumber, peeled, halved and sliced diagonally
  • a few sprigs of fresh cilantro, for garnishing
  • ½ tsp white peppercorns
  • salt

Ingredients for Chicken rice :

  • 3 cups long grained rice, washed and drained
  • 1 tbsp chopped garlic
  • 2 tsp salt
  • 2½ tbsp chicken fat or vegetable oil
  • 6 cups, or more, chicken broth [from the cooking broth]
  • 6 pandan leaves [screwpine leaves] [optional]

Ingredients for Special Chili Dipping Sauce :

  • 1 tbsp kaffir lime juice [Substitute: lime or lemon juice]
  • 1½-2 tbsp chicken broth [from the cooking broth]
  • 2 tsp sugar
  • 4 tbsp hot chili sauce
  • 4 cloves garlic, finely ground or mashed
  • 1 inch ginger, finely ground or grated
  • salt

To Prepare Special Chili Dipping Sauce :

  • Mix hot chili sauce with lime juice, sugar, garlic, ginger, chicken broth [spooning some of the chicken fat oil] and salt to taste
  • Pour chili sauce into small condiment dishes, for each individual serving

Potato Salad Recipe

RECIPE INGREDIENTS

4 1/2 pounds red-skinned potatoes

1/3 cup canola oil
1/4 cup Vineger
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/4 cups mayonnaise
1/4 cup dill pickle juice
3 tablespoons coarse-grained Dijon mustard
6 large hard-boiled eggs, chopped
1 1/2 cups finely chopped green onions
1 cup finely chopped celery
3/4 cup chopped fresh parsley
1/2 cup chopped dill pickle
1/2 cup sliced pimiento-stuffed green olives

DIRECTIONS

Working in 3 batches, cut potatoes into 3/4-inch cubes and steam until tender, about 10 minutes. Set aside.
Meanwhile, whisk oil, vinegar, salt and pepper in large bowl to blend. Add hot potatoes and gently toss until most of dressing is absorbed.
Stir mayonnaise, pickle juice and mustard in another large bowl to blend. Add all remaining ingredients and reserved potato mixture; toss to coat. Season to taste with salt and pepper. Cover and refrigerate.
DO-AHEAD TIP:
Salad can be prepared 1 day ahead. Keep refrigerated.

Pizza Recipe

Prep time: about 15 minutes

Ingredients:

  • 1 standard-sized Pizza Bread,
  • tomato sauce
  • shredded mozzarella cheese
  • toppings like diced green pepper, chopped onion, or chopped tomato (whatever you like)
  • seasonings like oregano, basil, and pepper
  • !/2 Bowl boiled and shredded chicken

Utensils:

  • oven
  • knife
  • baking sheet

Directions:

  1. Set the oven to low heat.
  2. Spread tomato sauce and chopped boiled chicken.
  3. Add your favorite toppings.
  4. Bake in the oven on baking sheet with low heat for about 5 to 8 minutes. You’ll know they’re done when the cheese is bubbly.
  5. Let cool for a minute, then enjoy your pizza!
